Risks in the production of meat and sausages

The food chain that characterises this specific type of sector is particularly complex and exposed to a varied range of risks that require substantial specialisation and experience. 
Some of the main risks typical for the food sector are connected with the special features of the treated material intended for large-scale trade and related to the responsibility directly borne by the producer for putting altered products into circulation, and additionally: 
  • problems related to the incorrect or incomplete traceability of raw materials
  • the quality and compliance certification with the quality standards required in the industry for the use of products qualifying also indirectly as GMO
  • arising from the conservation of the goods and possible deterioration due to defects or breakage of cells
  • referable to storage and packaging facilities, characterised by increasing investment
  • linked to brand imitation
  • product counterfeiting
